Ingredients:


For the Crust:


1 cup (2 sticks) unsalted butter, at room temperature

1/2 cup granulated sugar

2 cups all-purpose flour

1/4 teaspoon salt

1 teaspoon grated lemon zest (from about 2 lemons)

1/2 cup fresh lemon juice (from about 2 lemons)

Instructions:


Preheat the Oven:


Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper, leaving an overhang on the sides for easy removal.

Make the Crust:


In a medium bowl, beat the softened butter and 1/2 cup of granulated sugar until light and fluffy, about 2-3 minutes.

Gradually add 2 cups of flour and 1/4 teaspoon of salt to the butter mixture. Mix until the dough comes together and forms a crumbly texture.

Press the dough evenly into the bottom of the prepared baking pan.

Bake the crust in the preheated oven for 20-25 minutes or until it's lightly golden brown.

Prepare the Lemon Filling:


While the crust is baking, prepare the lemon filling. In a large bowl, whisk together 2 cups of granulated sugar, eggs, 1/3 cup of flour, lemon zest, and fresh lemon juice until well combined.

Assemble and Bake:


Once the crust is baked and still hot, pour the lemon filling evenly over the crust.

Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and no longer jiggles when gently shaken.

Cool and Dust:


Allow the lemon bars to cool completely in the pan on a wire rack. Once cooled, dust the top with powdered sugar.

Slice and Serve:


Use the parchment paper overhang to lift the lemon bars out of the pan. Place them on a cutting board and slice into squares or bars.
